I don't know much English.
That's why I'm writing my suggestion here by translating it from google translate.
I apologize in advance for typos.

First of all, I have to say that the Everything program is great.

MY SUGGESTION IS:
We did a search.
The results have arrived.
In the column "Path", in any row, we open the context menu.
There we can see all the folders in the path individually, up to the main drive.
And at each stage, the "Open" option appears.
My suggestion: It would be perfect if you put the exclude option under the "Open" option.
Whichever folder we wanted to exclude, we would choose directly from there.
The result of our selection would appear in the search box, for example !"C:\windows\system32".
In other words, using this method instead of manually typing the folders we want to exclude in the search box one by one will save us from misspellings and cause us to act much faster.

For better understanding, I drew my suggestion with Photoshop.

Everything 1.5 - the alpha version is available for testing - introduces Temporary Excludes for cases like this.

After enabling Temporary Excludes (Menu:Index > Enable Temporary Excludes) you can do the following from Everything's context
(just like you suggested :)) :
